Delicious Bacon and Spinach Appetizer
Are you looking for an easy and delicious appetizer and you love bacon? Try this one. I made it for my family and they loved it.
Ingredients

- 1 package of bacon

- 3 tablespoons coconut oil

- 3 tablespoons flour

- ½ teaspoon salt

- 1 teaspoon dried parsley

- 1 cup chicken broth

- 1 cup almond milk
-
- 1 1/2 cup shredded mozzarella & Parmesan cheese, divided

- 1 1/2 cup shredded Queso Quesadilla cheese, divided

- 2 cups chopped fresh spinach

- 1 (8oz) package cream cheese

- Fresh parsley
-
- 1 Roma tomato
- 1-2 Fresh Baguettes
Directions
- Preheat oven at 365 degrees.
- Place package of bacon on baking sheet. Bake for 15 minutes.
- In a medium skillet over medium heat, melt coconut oil. Whisk in flour until smooth.
- Add salt, dried parsley, cook for 1 minute or until smooth.
- (When bacon is cooked, remove from oven and pre-heat oven to 400 degrees.)
- Add chicken broth and almond milk to skillet, whisk until combined.
- Cook over medium heat, whisking often until thick and smooth.
- Stir in 1 cup of mozzarella and fresh Parmesan cheese and 1 cup Queso Quessadilla until melted.
- In a medium bowl, beat cream cheese with an electric mixer until smooth.
- Add Alfredo sauce and beat until combined.
- Break up cooked bacon and mix until blended.
- Add remaining cheeses and mix until blended.
- Add 2 cups of cut up spinach and mix until blended.
- Place mixture in an oven safe baking dish.
- Top with fresh parsley.
- Bake for 20 minutes.
- Remove from oven and garnish with cut up Roma tomato.
- Cut and serve with fresh baguette.
