Oven Baked Chicken with Garlic Mushroom Quinoa and Broccoli

Supper Idea

This is an easy and healthy supper option for tonight.

I still have to do to the store to pull this meal together, but will post pictures later when I make it.

Oven Bake you chicken with simple salt and pepper seasoning. I like to sprinkle with dried parsley and a little smoked paprika as well.

Here is the recipe for the Garlic Mushroom Quinoa:


1 c quinoa

1 Tbsp Olive Oil

1 pound cremini mushrooms, thinly sliced

5 cloves garlic, minced

1/2 tsp dried thyme

Salt and pepper to taste

2 Tbsp grated Parmesan


  1. In a large sauce pan of 2 cups of water, cook quinoa according to package instructions; set aside.
  2. Heat olive oil in a large skillet over medium high heat. Add mushrooms, garlic and thyme, and cook, stirring constantly, until tender, about 3-4 minuets; season with salt and pepper, to taste. Stir in quinoa until well combined.
  3. Serve immediately, garnish with Parmesan.
Serve this with your baked chicken and steamed broccoli.
